ATTENDANCE: 5 days a week. 1500 hours of lessons, internship and final project.

The Kitchen Manager and Food Consultant are great experts of the wine and food sector which combine in-depth technical and economic knowledge. Specifically, they are able to: improve production processes, develop new tools, undertake nutrition research and respect the sustainability of products, with the aim of reorganize the economy of catering.

What differentiates this course format from other is the amalgamation of best qualities of the chef and the Business. We transfer the humility of the profession through practical courses while borrowing from the organizational format of American or global food giants and combining with the Italian genius to teach and train students how to create a replicable method and set-up successful business not just restaurants that operate beyond the Patron.

This course teaches our students to explore and bring out the physiology of taste, the hedonistic aspects of food consumption, themes in  culinary anthropology and psychological dynamics without neglecting the economic goals achieved through good administration. The economic objectives remain paramount, in order to enrich our communities and become an enviable model globally.
